If he admits that he gambled on it then his football career is over. His lawyers knew he wasn't going to get off the hook on everything, so it was best that he admit to killing the dogs, do minimal jail time, and then come back and have a chance to play again. I guarantee you there will be a team that will take the chance on him when he comes back.
