I wouldn't bother with Psychology of Poker, but that's just me.

I'd also add Weighing the Odds in Holdem Poker and Holdem on the Come to the list of books.

WTO is a nice primer on the basic maths in the game.
SSHE is the bible for how to think about the play of hands.
HOC will further improve your understanding of drawing.
HEPFAP covers some very important techniques.
ITPM is a primer for how to think about the game.

And I assume Theory of Poker (TOP) wasn't mentioned because its just assumed to be required reading. Other than TOP, if I had to pick just one I'd go with SSHE, as it single handedly turned me into a winning player. Though the online game isn't as loose as the games it covers anymore, so HEPFAP would be good also if you only get one. I wouldn't say this to a new poker player.

The swings in limit are SICK. Start real low and move up as comfortable. As an experienced poker player but beginner LHE player I'd go with a 500BB roll for the level to start at for a non-pro player.

Reviewing and posting hands is seconded as an effective learning tool.
