I don't really like bluffing after we check behind on the turn. I find it better to use that betting pattern for value betting.

Usually yes, but there's a good chance this opponent has nothing at all. If he checks the turn and river, a bluff might do the trick. Plus, as a bad reg, he'll think you're less likely to be chasing a draw on a paired board.
