Hmm, so I'm assuming this player is somewhat tight, based on what you said about 3-betting.

I have a lot of trouble in this spot, because there will be a lot of times where I'll go for a flop c/r and the person will check behind. Or I'll get the flop c/r in, and they'll call my turn bet, and by now the pot is getting pretty big and overcards are starting to fall.

So what do you think about donking the flop with a PSB? You end up committing less chips on the flop than you would with a C/R and you have a shot to win it right away. Also if he calls, you can follow up on the turn with a bet that is smaller than it would've had to have been if you had C/R the flop. So it seems like you end up with about the same about of fold equity on the flop and turn with a smaller investment of chips.
