Would you be happy to get it all in vs the original PF raiser in this spot? If the answer is yes, then I think you should bet the flop with the intention of calling his shove. He likely doesn't have AA after the preflop smooth call, and his range will likely be as wide as what he opens after the BB calls.
Now, if fooz is a nitty as you say, then you don't want to get it all in vs. him. Btw, I think you made the right fold in this spot.
So, your flop line should be:
bet/fold to a raise by fooz
bet/call anything from UTG
You then have to decide what bet amount works best for those differing goals. I think 100-110 is good. You save yourself some money if fooz raises, and give UTG room to make a move, while not offering great implied odds if he calls.
