Sure. Go in to the general tab of poker tracker. Go down to "starting hands" and selected the "Categories" tab. Click the "maintain categories" button.

I use "ignore card order". For "3 to an 8" I select A-8 for each card. I don't remember if I did this on purpose or if it's the default, but this doesn't include pairs or trips for me.
