This is a weight transfer issue. (I have the same problem) Too much weight is on your back foot (right foot for right handed player) at impact. This tilts your hips and creates a higher trajectory. Unfortunately all of the new clubs accentuate this problem, unless you are good enough to move into at least a blade/CB hybrid. In the long run, this isn't the worst problem to deal with. It might shorten your game a little, but you don't have the embarassing "worm burners" or "Gopher Hunters"
Particularly with your irons, try to practice hitting "down" on the ball and taking a sizable divot. Or see your local PGA professional...
