I had a similar idea but haven't play-tested it yet. Basically it would be PLO8 and after the flop and turn betting rounds everyone has to expose one (live) card, leaving two cards face-up at the river betting round.
Good luck with your game. We play a lot of "roll your own" variants at my home game so I think it sounds interesting
