In the case of a table game, it will just get lumped in with the table hold (reducing it by whatever amount) and will never be discovered. In the case of a cashier or someone working the floor like a slot change person, the casino is aware humans make mistakes and they are insured against it. The chance that "you get someone fired" because you don't alert them to their pay-out error is virtually nil.
