Hand 1: I think I might check there a lot. That's a horrendous flop against a player like that. What's a nit calling a PF 3 bet (following an UTG raise) with? You are a 2:1 dog on that flop if he calls PF with 88+ & AK. If you c bet, obviously no hands that you beat call and none that beat you fold.

So, I might try to take advantage of his low aggression because he won't bluff you. If I check and he checks behind I value bet the Turn - then you get a call from a wider range. If I check and he bets I may just fold or call and c/f the Turn.

I don't mind a c-bet because it makes the hand a lot easier to play but I don't think its the most profitable option. However, don't feel as though you always need to c-bet in 3 bet pots. Sometimes you are just too far ahead or behind villain's range to make money out of it.

Hand 2: Fine.
