This looks very good. It will definitely be a challenge to stick to it but you've done a great job balancing things out. Drop the carrot at midnight(pointless carbs) and you're good to go.
Eat exactly the same on non-workout days but you can drop the carbs that are in your post-workout meal. Your body doesn't need them for energy/glycogen replenishment on days you aren't training so I don't think you need quite as many.
Do the HIIT whenever you feel up to it, honestly. You can't really do it on leg day so just do it 4x a week or w/e. Get in the gym 5 days a week, it'll be like a second home after a while.
