QFT, guys like Souray/McCabe/Kaberle/Boyle are some of the top offensive defensemen and are worth consideration.

Wingers tend to be the goalscorers on most teams, so they'll be more valuable than centres in your league, too. As far as goalies go, wins are the hottest commodity, so pick a team that is most likely to do very well in the overall scheme of things, all the while making sure you take a goalie off of said team whose job is largely uncontested (i.e. he'll be starting the majority of games for his team).

I personally hate not having at least one top-tier goalie on any of my fantasy teams in head-to-head leagues. Too many goalie categories can be won/lost by one performance every week.
