The Racing Post series books The Definitive Guide to Betting on Sport and The Definitive Guide to Betting Exchanges have sections by Kevin Pullein that are good primers for betting on soccer.

I would also recommend Successful Football Betting by Geoff Harvey, Fixed Odds Sports Betting by Joseph Buchdahl, and Betting to Win by Leighton Vaughan Williams.
