The latest 8800 drivers offer a software scaling option. Since 1920x1200 scales at 4:3 to 2560x1200 there would be no black bars. Scaling isn't exactly the same as stretching, but you probably aren't much interested in this. The short answer is yes, it'll work. You can also display the game boxed with black borders (same software). You will probably want to compare this with the scaled image to see which you prefer as the scaled image might not look as good.
