Just like you convert any other poker game to a tournament poker game. In Chinese you pay your opponent X dollars per point that they win from you (or that you win from them) at showdown. Just like any other tournament, you start with a fixed stack of chips, and for n minutes each point is going to be X chips. At then end of level 1, the price per point goes up to 2X or whatever, and you play at this new price for another n minutes. Lather, rinse, repeat.
