Do you believe poker theory in limit is near the peak of what we're capable of understanding, or do you feel there's plenty more unique insights still to be discovered with the game?

I think there'll always be strategies and counter-strategies that'll get explored and discovered. For instance, in Vegas this summer I realized this one LAG was always doing something specific against me, which I found really tough to play against (I'm not going to expand on it here because I'm still testing it out in my own game, and, I don't want more people doing it against me)

I share a similar style to yours in regards to agression and the tendency to check-raise many flops against a player with a loose PF range.
One noticeable exploit ive found with my style is that the only time im just calling the flop and turn on a slightly drawy but not too scary board is when I have exactly ace high. Most other hands I will take control of the initiative in some way. I've also noticed many other solid 10/20 TAG's do the same. I can thus value bet AK+ and check behind the rest maximally exploiting my opponent.

If I have ace high OOP in these situations I dont want to get agressive beccause Im afraid a draw will push me off the best hand by playing back at me, but at the same time I dont want to be passive with my other hands to balance my "calling range". However my hand is also transparent..
Have you ever thought about this and figured a way to balance your "call down" range that would make it harder for your opponents to value rape you to death?

The key is to make your check/call range wider and don't always checkraise when you flop a pair.

Where's the best places to find mid-high stakes short handed games live in north america? (30/60+)

Late night Commerce Casino, bar none. Otherwise, I hear Casino Arizona has good action, and Bay 101 or Canterbury can certainly have some decent short games early enough into the morning...
