1) That if I was to halve the numbers in the "attack" table it would give me the correct figures to jam from the button (assuming all fold to me)
2) That if I was to halve the numbers in the "defend" table it would give me the correct figures to call a jam from the blind?

Jam table is for SB. Defend table is for BB. In a 2 man game (where SB is button). A full ring game folded to the SB is similar but not identical b/c card removal effects.
