I think only you can answer this question. Gradually add tables and see how it works out for you. On average, I 3-table 3 hours a night, 6-7 days a week. I've tried less/more, but this is a good level for me since I'm balancing family, work, and poker. I also get bored with less than 3 tables and I believe my win rate drops with more tables.
