Regarding the first thing... I'll say that for those who hold a certain viewpoint, they don't feel that those who hold a certain other viewpoint will ever get it, so it's energy wasted trying to explain.
As to the other thing... my point is that the "ideal" world of people tipping dealers for good service is a world in which everyone at the table is much better at poker. I prefer my opponents be worse players than I am.
