Because in my books an unknown doesnt c/r with an ace. He flat called preflop so AK/AQ is out of his range(at least its a v small portion of his range). And unknowns in my experience dont get tricky with aces like this

I see a LOT of tagfish playing AQ and AK this way (i.e. not 3-betting preflop, and c/ring when they hit). I would therefore not at all assume that an unknown can't have an Ace here.
