Honestly I think people overestimate the 40 minute levels thing and the 4500 chips with the rebuy. The dealers weren't that fast, and they don't have auto shufflers. They also have them do chip counts (where the dealers have to sign pieces of paper and stuff) DURING the tourney. Why can't they do that during hte break, I don't know.
