OP, if you're gonna do all this stuff, fine, but even more important is persistence in the way of follow-up. You've made it clear you don't have an "in", and be aware that one or several potential candidates will come referred to the owners/managers and I'm sure the restaurant business is even more referral-based than most industries. You can minimize your competitive disadvantage with phone calls, e-mails, stop-bys, etc. in order to make yourself known.

This is coming from someone outside the industry but is more common sense than anything. Maybe someone within the restaurant/club business can give you more specific help.
