I think this is a meta game issue. You sound like you know this type of guy is gonna call flop, then bet turn when you check. Then let him do it every time. Make your decision on the turn. Check even your good hands; maybe all your hands on the turn. Then raise if you have top pair or better. Call usually otherwise. Maybe call down some K high hands on the river too. This is a winning stategy for me on its own, but it will probably also have the effect of making him calm down and check behind you more and therefore bluff you off your hand less. That or he will get up and leave the table, in my experience.
