These aren't really "plays" but, I saw at the Atlanta Olympics:
Kerri Strug vault w/ her f'd up ankle and stick the landing w/ her one good foot to tie up the Gold for the US women.
Michael Johnson win the 200 and 400m Golds. This doesn't sound like much, and I'm not even much of a track fan, but he was truly amazing to see run.
Carl Lewis winning the Gold in the long jump. This was not a very exciting contest to watch, just listing it here to go along with the others.
