A buddy of mine has gone through this when we go out to Vegas, he'll place bets on events that will close after we go back home. I'm pretty sure he does two things:

1. Sends it either registered or certified mail. I think its certified; basically you want the option that gets you mailed a return receipt proving that the Vegas book physically received the mail.

2. Depending on how much your stubs are worth, you might want to pay a few bucks to the post office to insure it. I think it cost him something like $5 to insure up to $500 or something. Don't hold me to the exact number, I just remember it being a no brainer to get the insurance cause it was so cheap.

With the registered mail plus the insurance, you're covered if either side loses it. Although if the book gets the mail but says they then lost the ticket, I don't know how you would go about proving how much the ticket was for. Given that you might want to send each one out in a separate mail to cover yourself.
