I did the straightforward play and bet out 6th and 7th. He called and I won. He started with two Aces in the hole.

I still think checkraising (either 6th or 7th) is the slightly better play than betting out. Almost every player than sits in these 30/60 games will bet two big pair when checked to on 6th or 7th, and after his 3rd and 5th street play it is pretty clear that this is his hand. Check/raising 5th is bad because it looks too suspicious, and we don't want both players to stay in the hand and get free cards (which would likely be what would happen). Also, if we checked 5th and somehow he did bet it, I think there's a much better chance he folds to the check/raise than on 6th (or 7th), since on those later streets players feel like they are too close to showdown not to see one.
