Nice report...I was there this weekend as well, mostly in the Borg on Saturday in the 80 game. It was 80 Hold Em by the way...I've never seen 80 stud there though I wish they had it! Borg is the place for high limit hold em games, both limit and no limit. Borg has 40-80 and 80-160, as well as 10-25 NL.

Taj's biggest hold em game is almost always just 20-40 (which is an absolutely great game by the way). The big games you saw at Taj were probably stud games. They have good 75-150 stud games (as well as 150-300 and some higher ones but I avoid those). AC is a great place to play.
