Almost all are 10-handed. (Except stud I think?) Once in a while they start up a 9-handed hold 'em table, but it's not the norm.

Am I the only one who doesn't like to play at a newly formed table? I feel like people are so cautious at new tables, just feeling each other out. They (presumably) just got there, so they are fresh....
