7/27 can be played so that a hand must be at least seven and busts at anything over 27. This forces players to hit their pat 6s and carefully consider whether or not to hit high hands that risk...

In the games I play in, the dealer shuffles his own cards and offers a cut behind (one deck in play).
I tend to let string bets slide somewhat regularly, as the players making them are weak players....

I've been really happy with the nexgen series 8000s I bought. They're not as good as my buddy's set of horseheads, but they were way cheaper. The 8000s are single color edgespot so you might like...

You could try making your game a mixed game. My home game is a rotation of 7Stud, NL Holdem, PL Omaha, Razz, and PL Crazy Pineapple. Stud games would encourage your fishier players, as they'd win...
