Anybody out there playing online with either of these?

At this point, most likely not. However, both products have been "jailbreaked" (perhaps that's jailbroken) meaning that 3rd party apps can be written and/or installed on one.

The question remains, since its heritage is in Mac OSX, will a native Mac client such as Full Tilt run on it?

I don't know the technical details, but it seems possible. But I don't know of any currently working examples.

I have a iPhone that's been jailbroken and have absolutely no desire to play poker on it.

I dont have one and never really tried but Im pretty sure they wont run Java applications or download outside sources like Full Tilt. I think your only chance is somewhere like PokerRoom which has "mobile" phone poker. Like Steele said above, no desire to play on one here either.
