Weekley Meal Prep
 
I find it almost impossible to stay on a good, healthy meal schedule unless I do the bulk of the week's meal prep in one go. I'm sure a lot of you are in the same boat, and I'd like to hear what you're doing...

For example, over the last two hours, I cooked up:

-family pack of chicken breasts
-2 cups of brown rice
-big thing of broccoli
-big thing of spinach
-two salmon fillets w/ soy & orange sauce
-tofu, rice noodle, & broc stir fry (fried tofu in canola oil beforehand for texture)

Really standard stuff. Anyone cook anything more interesting in bulk?

just finished cooking actually...

i only bulk cook for 2 of my daily meals (usually 6 meals per day)

meal 1:kidney and pinto beans, corn, peppers, tomato, ground turkey, red onion...makes a kind of chili mix...i usually add some lime juice and chili powder...

meal 2: mixed veggies i buy at costco (some frozen package deal) with brocolli, cauliflower, squash, carrot etc...4 chicken breasts...usually just eat with some dijon mustard...

i cook them both up in huge bowls then scoop them into tupperware for each meal...

I like the chili idea- might have to incorporate something similar. Also, I AM named Dan fwiw.

Prepare a large bowl of homemade salsa for use during the week as a condiment.

Chili is great for this. If you get a good recipe, damn healthy too.

Another good one is spaghetti w/ meat sauce. Freeze a ton of the sauce and thaw it when you want to use it. To "healthify" this meal, use grass fed beef and whole grain pasta that is fortified with omega-3.

Salsa is a good one- def get sick of dijon, tabasco, etc pretty quick. I'm eating chx/rice w/ dijon right now actually, and some good salsa would be really good. Also, is there any more depressing plate of food than chicken and brown rice before adding veggies?... monotone gray is not appetizing.

Also, tapatio and cholula are good zero calorie condiments.

I cook most in bulk, but nothing interesting. One or two dozen eggs, chopped beef, chicken, and turkey burgers every weekend.

How do you cook them? Hard-boiled? I know scrambled eggs taste terrible when you try to reheat them...
