how do i make pa hud display all my stats like it does for others

i only see an option to have it show the other player's stats from a current session, but what if i want to see my total stats?

PAHud shows only your table stats to show your current table image. You must use PT to see your total stats.

To see a summary of your actions on all streets go to General Tab>More Detail button.

Continuation bet data is unique to PAHud and does not appear in PokerTracker. It's promised for the upcoming PT3.
