Nature/Outdoor Activities around Vegas?

I'm doing my 4th trip from NJ to LV around New Years. My girlfriend is coming along so I won't be doing too much gambling/poker, and we are planning on renting a car and doing a lot of hiking/exploring.

We are definitely planning on going to Red Rock Canyon, and possibly Lake Mead. Grand Canyon seems like too far of a drive for our 1 week visit. Might head to Death Valley though.

Anyone other good spots to hit within a 2-3 hour radius of Las Vegas?

Also, we will be in Vegas for New Years... any good places to go for that?

death valley /furnace creek is nice then. also a trip to scotty's castle is great.
valley of fire is fun. up in red rock there are lots of nice hikes and if you can find them a few hot springs but i havent been there in ages.
you can go up to mt. charelston and ski and hike around and look for the sheep.

I have taken to trip to grand canyon twice - there is a great lodge you can stay at on the south rim - so drive out, spend the night, and go to the canyon in morning and drive back. It is really not that far.
You can also take a helicoopter tour - they aren't that much $$$.
