Yeah, was pretty sure they weren't raw. Fresh doesn't mean raw.

The "canned" confusion probably comes from "there are like 15 cans of oysters and one that says "Crab Claws" plus other words near it."

fresh means it wasn't frozen after it was cooked. you don't buy raw shelled crab meat. it doesn't work that way. it would be like buying raw shelled lobster. just doesn't exist. usually crab cakes are made with lump crabmeat. the clawmeat is lower quality. i lived in MD for a few years. damn i want some fresh maryland crabs right about now.

Sure, you can do it, although it's not very common AT ALL.
And I imagine it's considered a very low class crabcake.

It would have to be the other way around.

Turn the scrap meat into things like crab cakes.

Keep the best meat from the claws for eating straight from the claw.

I'm talking about MD blue crabs(as op referenced by pic.) Claw meat is *mostly* used for crab soup unless it's being picked and eaten. What you say in your post may apply to King crabs, but it's completely wrong for MD blue crabs. I grew up in MD so I have a pretty decent idea about how we eat crabs. OK? Once again, for the record, jumbo lump or backfin are used to make crabcakes. Claws are sweet and flaky and you usually collect them to eat after you're done picking crabs.
