Awesome -- except substitute champagne and orange juice for the bloody mary and you have a winner.

Hollandaise sause == sour cream, mayo, mustard, lemon juice... maybe some paprika, but that is close enough

Add oiling water real slow so as not to cook the egg yolk.
white-wine
4 tablespoons boiling water
3 large egg yolks
1/2 cup unsalted butter
1/4 teaspoon cayenne
1/2 teaspoon salt

I know this isn't a cooking thread, but if you have a large glass bowl (pyrex ftw) you can make this without adding water to the mixture. Just get some water (like half an inch) at a good simmer to get some good steam going. Temper the sauce in the glass bowl so you don't scramble the eggs, but it still gets cooked so you're not getting the salmonella.
