Easy Spaghetti:
1 big can of tomato sauce 1 normal can of petite diced tomatoes with something (there are a few options that are good) 1 normal can (or two small cans) of toamto sause with garlic, basil and oregano (The actual amount of tomato products you want to use may be off, this would be 2-4 meals worth for 1 person) Augment with more basil and oregano (and garlic if you want, but then you have to chop the garlick up and you really should sautee it in olive oil a little before putting it in, so ummm, just use jarred garlic if you want more garlic and are in a hurry) and/or whatever else you like. 1 package of turkey meatball - a lot of stores have them and they are pretty good. All told, with an electric can opener, it should take less than 5 minutes to have this going. Just stir everything (to mix in the spices you add) put it on medium heat and you are done. Boil water and cook pasta of choice. The seasoned tomato products are pretty sweet for slapping something together quickly that isn't too bland. |

I don't have alot of time between classes, research, and work to eat well, but I will usually get 2-3 nights a week to cook so I will make enough to eat a couple meals or enough to freeze it. Here are a few things that freeze/reheat well
Stuffed Peppers: Fresh peppers, 1 lb ground beef, 2 cans tomato soup, 1 can diced tomato (you can dice fresh yourself if you have the time), 1 cup rice, 2 cans tomato sauce Brown beef and drain it. Add the soup, tomatoes to the beef and bring to a slow boil. Add the uncooked rice, add a little salt and pepper. Cook slowly until the rice is soft, usually about 15 minutes. While the rice is cooking cut out the tops of the peppers and get the seeds and junk out from the inside. When the beef/rice is done cooking spoon it into the peppers and put in a roast pan. Just toss the excess rice/beef into the pan. Pour the tomato sauce over the peppers they don't dry out in the oven. Cover roast pan and cook for about 45 min at 350 or until peppers are soft. For some reason friends have found this recipe odd. I thought it was pretty normal but maybe its a PA Dutch or German type of thing. You can add some red peppers or jalapeno or something if you're in the mood for it. Beef Stroganoff (need a crockpot) 1 lb beef cubes, 1 can cream of mushroom soup, 1 envelope lipton onion soup mix Brown beef cubes in pan with a little oil, drain. Put the beef, soup mix, and soup along with about a 1/4 cup of water into crock pot. Set crock pot for 5 hours (not set in stone, meat should be very tender and almost melt in your mouth). Obviously this works best if you start it early in the day. Serve over some noodles or over some nice bread. Definitely add some parmesan. You can make it without the crock pot, but your meat will not be very tender, I highly recommend it |

I never had one until I got married, but those things are easy to cook with. Most bachelors who can make Hamburger Helper could handle basic crock pot recipes. |

individual boxes of chicken wings- take out of package, heat on a cookie sheet coverd with tin foil for 15 minutes, eat directly of sheet, NO CLEANUP!
Scrambled eggs, and breakfast sausages Kosher dogs and wheat bread Macadamias, cashews peanuts etc + Protien shake Make a big pot of chilli, and buy about 10 small tupperwares, put 2 scoops in each one, throw in freezer, microwave when you want chilli Buy a bunch of lean ground beef, spray some tinfoil with pam, make burgers, wrap burgers in tin foil individually, put in freezer, take one out before work to thaw when you want a burger Frozen fish (salmon, cod whatever) usually can be found in individuual vacuum sealed packages, take some tin foil, make a little packet out of the tin foil, throw some lemons/oranges, lemon juice, cook in oven until done the key is preperation, take 2 hours out of every week, 1 to go grocery shopping, and one to make the burgers, the chilli, etc to stick in teh freezer, I also during that prep hour BBQ a wide variety of [censored], sausages, turkey breast, chicken, etc, and throw it in individual tupperwares in the fridge, so I can take it with me to work etc. The only "side dishes" I have with any of this stuff is a can of veggies (mixed veggies, spinach, green beans, peas, etc) |

I make a pasta salad that is pretty easy and lasts for several days
1 bag of the tri-color rotini 1 large bag frozen mixed veggies (peas, carrots, corn, etc) 1/2 onion chopped 1 large bottle of italian salad dressing (the creamy variety is good if you are not worried about fat otherwise stick to the zesty oil and vinegar type. 1. Boil pasta 2. Dump everything else in a large bowl with cooked pasta 3. Eat |

Anyway I've mentioned it as a form of accountability on 2+2 in several places but I'm dieting/exercising a lot with "great success!" (lost a little over 20 lbs. this month and put on muscle)
I go low calorie on almost everything but going from heavy to skinny is rough because i love to eat. This is what I'm making for dinner tonight: 1 slice of soy bread from super market (has protein and such). Put a bunch of turkey on there, some sauerkraut, a dash of Frank's Hot Sauce and 2 slices of kraft fat free plastic, i mean cheese. throw it in the toaster oven (i will use over on "broil") until the cheese melts a bit, next to the other piece of toast. Throw some mustard on there and you are good to go. This is a really good sandwich and the kraut and hot sauce has 0 calories. The mustard has a tiny bit and the bogus cheese has about 30 a slice but next to no carbs and a good amount of protein. It tastes really good. |
