Many clubs grew out of church societies, blue is rationally associated with protestants red with Catholics. This doesn’t always hold true Liverpool was formed by ex Everton members. I also suspect that options for dying fabric in bright colours were limited in the 1880s.

Also established teams loaned kits to new teams and the colours just stuck, for example Juventus' kit came from little Notts County waaaay back in the day.

I believe it was the other way around everton were ex liverpool players

The way Arsenal and Man U have looked so far, the matchup isn't as intriguing as it should be.

Liverpool/Chelsea is interesting though. Chelsea hasn't looked that good, but is doing well because they are playing poor teams. Liverpool just got trounced at home, but allegedly outplayed Everton (I haven't seen the game or the highlights, yet.)
