Wow, I must be bored at work but just thought of another one. Even though I don't care for him much Jude Law was in Midnight In The Garden Of Good And Evil before he was famous, just a small part but after he went big there I was like ohhh damn thats Jude Law. I guess you could add Gattica to that as well.

i'm not sure how many people have seen Airborne, but i've come across it more than once on tv. it features a young Seth Green as the cousin of a surfing/rollerblading California kid transplanted to Minnesota. it is unspeakably awesome.
also not quite on topic, someone mentioned George Clooney on Roseanne, but he appeared on The Facts of Life before this (during the "hey, let's open a bakery!" phase of the show).
