Serious advice: next time she tries to set up a date, tell her you already have plans for then. Don't be a dick, but DO NOT let her think you are an easy fall back position or desperate or anything like that. Update:

I finally met her.

The reason she cancelled is her uncle passed away and she's spending time with her family...but she called me back immediately after and asked if we could meet for a couple hours for coffee and her mom would watch her son. So I finally got to meet her. She's very nice, and we actually have a lot of common. Really cute too.
