Clint Eastwood was in the Return of the Creature - the sequel to the Creature in the Black Lagoon. He plays an assitant to a scientist and has like one line, but he still delivers it like dirty harry.
Arnold Schwartzenegger was in the Elliot Gould version of The Long Goodbye. I think he was a mob bodygaurd and he's in it for like 3 seconds but he manages to take his shirt off. This is somewhat well known, but Morgan Freeman was on the Electric Company. Sylvester Stallone was a street tough who chased Woody Allen in Take the Money and Run (or maybe it was Bananas or maybe something else).
