Here's how it's done:
-Mayo/Miracle Whip spread on both pieces of bread -Meat on bottom piece of bread -Lettuce on top of meat -Cheese on top of lettuce -Mustard squirted in zig-zags on the top piece of bread Alternate method is to put the mustard on after the mayo and then put together the two pieces of bread to get mustard on top and bottom.

In general, I agree with the OP. But I think some condiments belong under the meat. Mustard, for instance, tastes better if on the meat side of the bread that on the veggie side. I don't like mayo or ketchup, but if I were putting a salad-dressing type condiment (like oil or blue cheese) on a sandwich, it would go on the veggie side.

I worked at a Deli here is the correct way
Cut Bread/hero almost all the way through Meat Cheeese Veggie (lettuce first , tomato , pepppers...) Condoments spread kind (IE Mayo) Condoments bottle squirtable kind (IE Non Deli Mustard) Oil+Vin/S+P If you put the condoments on first you run the risk of getting messy.
