Most places don't cook well like that because it takes too long. Generally people who order a steak well done don't know what the [censored] they are doing and will bitch when their steak takes 20 - 30 mins to cook.

I have a love-hate relationship with ribeye. It's such a pain to eat, but it does taste wonderful, at least to me. I do like it a lot if I'm going to try any kind of sauce. It's got a strong enough flavor that it's not drowned out, which can happen with strip.
