One of my favorite movies, "Real Genius", has two, although only knowledgeable people may know who these dudes are.
Stacy Peralta plays the pilot of the spy plane. He later went on to become a big-time skateboard film director ("Dogtown and Z-Boys"). Also, Dean Devlin plays one of the students in the dorm. He later went on to write/produce such films as "Stargate", "Independence Day", and "Godzilla".

Michelle Pfeiffer in Scarface. Saw that the other day and was totally shocked it was her. Not bad looking either...
edit: Not particularly a minor role, I guess.
