Off the top of my head, I can tell you that cucumbers (especially if steamed), onion rings, brisket and to some extent chicken wings are delicious with just melted American cheese.

I can't off the top of my head think of how the asian dishes can be appetizing with any cheese, but seared tuna is excellent with goat cheese.

I understand why you might think that these dishes wouldn't be any good with any kind of cheese, but I think that you're not really giving enough thought to the wide range of various types of cheeses available.

I think that even a quick glance at a fondue cookbook could show you what various cheeses go well with an innumerable number of foods.
