Beef Tenderloin w/ medley of roasted baby potatoes, sweet potatoes, butternut squash, brussel sprouts, and red bell peppers.
Vegetables: Quarter a few baby potatoes, cut up a red bell pepper into bite size pieces, add a few brussel sprouts and some pre-cut butternut squash pieces and sweet potato strips. Drizzle w/ tbsp of olive oil and toss w/ salt and pepper. Put in 400 degree oven for 40 minutes. Steak: Season steak w/ salt, pepper, garlic. Put on G5 Foreman Grill, high setting for 4 minutes (medium/medium rare, adjust to taste). Put it all on a plate and enjoy with some nice red wine!
