[ QUOTE ] I'm thinking next pizza will be Mediterranean style....oh and one thing that hurts right now is tomatoes being out of season. [/ QUOTE ] Good canned tomatoes are most likely better than what you are using anyway. I swear its not cheating! [/ QUOTE ] no I'm using canned tomatoes in the sauce...but I'd like to add some xtra tomatoe as topping...but winter tomatoes taste like poop; |

Pizza looks great. Although already mentioned in the thread, own crust is definitely a necessity. Also, fresh mozarella is great as well. A "pizza stone" is aboslutely amazing. Especially for leftovers, but either way it gives the bottom a little crunch and just overall makes the pizza a lot better.

WTF kind of complicated stove is that?
And WTF you make an uber-secret red sauce (? -- red sauce on pizza?) recipe but then slop it on a pre-made crust? But anyway, anything that gets people playing around with how incredibly easy it is to beat premade or take-out has gotta be a step in the right direction. |

![]() This is a homemade pie from a few months ago. For the crust I usully use a pre-made dough from the bakery section of the grocery store. It's not making it yourself, but at least it's fresh. I put some extra virgin olive oil in a pan and heat it with some minced garlic for about 10 minutes. A few spoonfuls get spread on the dough before the toppings go on. I use fresh mozz, sliced tomatoes, and lots of hand torn fresh basil. I suggest always putting some parmesian cheese on because if you don't, the pie seems not salty enough. I put some cracked black pepper on when it comes out of the oven for a little zing. |

i never thought about purchasing dough directly from a pizzeria. That might actually make it worth it to buy a pizza stove and make your own pizzas. Trying to make your own dough, or using a premade crust usually equates to a very lousy pizza imho.

So I'm sure everyone was wondering "but ZOMG, what are they going to do with all that leftover sauce!?"
Well, I've returned to to ease everyone's fears. It did NOT go wasted. First, I made more sauce and added it to the leftover + some water: ![]() Next, I used another one of my awesome Italian aunt's recipes to make meatballs. Yum, appetizing mixture: ![]() Next, I formed the mixture into large (AEKDBet's Chair's preference) meatballs and dropped them into the bubbling sauce. ![]() I then let the meatballs simmer in the sauce for a little over an hour. Beautiful. ![]() I did all this before 'Chair got home (I get home a couple hours before him) so I could be a kickass girlfriend and have dinner ready for him. He comes through the door and immediately creates an artless, though delicious, dog-bowl out of my spaghetti and meatballs (and anyone who wants to say this isn't 'homemade' can kiss my ass). ![]() The end!!! |

FFK,
Are you answering PMs for the sauce recipe individually, or do you just want to go ahead and post it since you're giving it out anyways? |
