They of course make money from these "house shows" but also use them to test audience reaction to new storylines, turning someone from heel to face, etc. Everyone involved understands that if it doesn't happen on tv, it never really happened at all.

Yep. The matches themselves will be different (often with different outcomes), but most of the same guys will pair up during a tour. Okay, that sounded extremely gay.

So when someone says 'Jones has never lost to Smith', in fact they could have done so 10 times in off TV cards?

Absolutely. For example, Ric Flair is often referred to as the 16-time World Champion, but if you counted all the times that he lost the belt on some tour and won it right back the number would be in the twenties.

Also, often they just blatantly rewrite history. Kane and Undertaker used to be brothers, but aren't anymore as far as I can tell. Edge and Christian were brothers, but then weren't anymore.

They don't pay their own travel expenses but they're not all getting first-class travel. Jobbers fly coach!

The WWE schedule is [censored] brutal, particularly considering there is no "offseason."

BTW what is with WWE having 2 brands? Do the wrestlers from each brand only fight their own? Is there any difference between the 2 brands?
