Would pay off my house, cay payments, etc.

Then, I'd eat meat with every meal for a long long time.

the reasoning is fine, but I'm surprised he didn't take the short term discount into affect. IE you could do almost anything for a week - I said I would drink only water and vitamin supplements for $5k, so eating Vegan for $1k would be very easy.

but eating Vegan for 52 weeks is more than 52 times harder than eating Vegan for 1 week.
