1) A quality onion bagel or onion roll is excellent for most sandwiches.
2) Don't toast your bread, grill it. Heat up some olive oil in a pan and grill until golden brown. The outside of your bagel or roll will be still be soft while the inside is warm and crunchy.
3) If you like chips in your sandwich, try french fries.
Edit: When picking a bagel choose wisely. Bagels for sandwiches are like girlfriends, you don't want one with a big hole.
