I think this is one of the things American industry does especially well. Performance based pay is good for everyone. Customers get better service (yes, much better than in Europe) and waiters and waitresses get constant constructive criticism or reinforcement. Having worked in this industry during high school/college I loved the tipping system. Maybe it's my naive desire for "fairness" that I enjoy seeing better servers get paid more than worse servers.
